Thanksgiving is officially over, and I can only imagine how much leftover food you have (I know I do). But no worries, I'm here to help. Check out these delicious and innovative leftover recipes for you and your family to enjoy:

 

Perfect for the cold weather, check out this hearty Turkey Noodle Soup from Delish

Prep Time: 15 minutes

Total Time: 35 minutes

Ingredients:

  • 2 tbsp. extra-virgin olive oil
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, sliced
  • 1 medium yellow onion, chopped
  • 1 leek, cleaned and chopped, whites and light green parts only
  • Kosher salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • 4 c. turkey stock (or low-sodium chicken broth) 
  • 3 c.water
  • Small bunch thyme
  • Small bunch rosemary
  • 1 bay leaf
  • 1 tsp. dried oregano
  • Pinch crushed red pepper flakes
  • 1 (12-oz.) package egg noodles
  • 3 c. cooked shredded turkey

Directions:

  1. In a large pot over medium heat, heat oil. Add carrots, celery, onion, and leek and cook until soft, 5 minutes. Season with salt and pepper. Add garlic and cook until fragrant, 1 minute more. 
  2. Add broth, water, thyme, rosemary, bay leaf, oregano, and pinch red pepper flakes. Bring to a boil, then add egg noodles. Cover and cook until pasta is cooked through, 7 minutes. Discard thyme, rosemary, and bay leaf. 
  3. Add turkey and simmer until warmed through, 5 minutes. Season with more salt and pepper.

Looking for something quick? Check out this Leftover Panini from Food Network!

Total Time: 15 minutes

Ingredients:

  • 2 tablespoons Dijon mustard
  • 2 slices sourdough sandwich bread 
  • 2 slices Swiss cheese
  • 1/3 cup shredded leftover roast turkey 
  • 3 tablespoons leftover cranberry sauce 
  • 1/3 cup leftover dressing 
  • 2 tablespoons leftover giblet gravy 
  • 2 tablespoons butter, at room temperature

Directions:

  1. Spread the mustard on both slices of bread, then lay a slice of cheese on each piece. On one slice, arrange the turkey and the cranberry sauce. On the other slice, lay on the dressing and spoon the gravy over the top.
  2. Carefully unite the two halves into one sandwich, then spread the top side of the bread with 1 tablespoon of the butter.
  3. Invert the sandwich, butter-side down, onto a hot panini maker (or a grill pan or skillet over medium-low heat; see Cook's Note). Spread the top with the remaining 1 tablespoon butter.
  4. Close the panini maker and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted. (If using a grill pan or skillet, flip the sandwich halfway through to grill on the other side.)
  5. Pull the sandwich off the heat and slice it in half--this sandwich is to die for!
