The Perfect Lomo Saltado

Ingredients

  • 3lbs. Sirloin
  • Garlic pepper
  • Salt
  • 1/2 tsp beef broth mix
  • 3 peppers
  • 1 large red onion
  • 2 tomatoes
  • 7-8 Tbl soy sauce
  • 2 cups of rice
  • 1/2 of a big bag of frozen fries
  • Oil
  • 4 cloves of garlic

Directions

  1. In a big pan, drizzle oil, add 2 garlic cloves and sprinkle garlic pepper, salt and beef broth mix. Add 3lbs of meat on medium/high (7 or 8) heat. Cover and flip periodically for 7-8 mins. During this time add more garlic pepper, salt and 6 Tbl spoons of soy sauce. Once the meat is brown take it out and place into a bowl with a slotted spoon. Place the meat juice in a separate small bowl.
  2. Do not clean the pan, just add more oil, 2 garlic cloves, garlic pepper and salt. Once oil is hot add peppers. After peppers are half way cooked add the onions and add more garlic pepper and salt. After those are cooked add the two cut up tomatoes.
  3. Once the veggies are ready add the meat back into the pan and mix together. Don't add the sauce until you are 2-3 mins away from serving the food.
  4. Make half a bag of fries in the air fryer, you might want to start this at the beginning of cooking because they can take a while. Take about 45 mins. Make sure to spray the air fryer and fries with Pam. Once finished cooking add salt and garlic pepper to taste.
  5. Make 2 cups of rice in the pressure cooker. Takes about 12 mins between preheating and cooking. Add some oil and 4 cups of water in the pressure cooker for the rice. MAKE SURE YOU WASH THE RICE!
  6. For the sauce: 2 jalapeños (take seeds off unless you want it spicy), Handful of cilantro, Handful of lettuce, 1 garlic clove, 3 tbsp olive oil, 2 tbsp mayonnaise, 1 tbsp sour cream, Salt and pepper to taste
  7. Blend it all together.
