Ingredients:

  • Salt
  • Pepper
  • 5-7 Eggs
  • Breadcrumbs- 2-3 Cups 
  • White Rice - 2 Cups
  • Garlic Cloves - 2
  • Oil
  • 3 Tomatoes
  • 1 Onion
  • 1 Pepper

Directions:

  1. Chop up tomatoes, pepper, and onion. Soak onions in water. Set Aside.
  2. Boil potatoes in salt water.
  3. Start cooking white rice while the potatoes are boiling. Lightly toast the rice, and add in 2 cloves of garlic. Using a 2:1 ratio, add water and cook rice based on package instructions.
  4. Once the potatoes are soft and tender. Remove from water, cut it into circular pieces and remove the skin.
  5. Fry potatoes in oil on both sides
  6. Season ground meat with salt, pepper, and cumin to taste. Add in breadcrumbs and mix. Add in more breadcrumbs if the mixture is too wet. Create big meatballs
  7. Layout a crumbled piece of parchment paper, sprinkle on the breadcrumbs then place a meatball.
  8. Place another piece of parchment paper on top of the meatball and squish. Gently beat out ground meat with a pestle or rolling pin. Add more breadcrumbs in between pounding. The goal is to get the ground meat as thin as possible and as big as possible. Ideally, you want it the size of your dinner plate.
  9. Fry thin pieces of ground meat on both sides.
  10. Fry eggs to your liking.
  11. Plate food. Bed of rice, potatoes, meat, fried eggs on top of the meat with your veggies.
