Jackie's Vegan Family-Friendly Coquito

Jackie may not have won the #CTownCoquitoBattles, but her recipe is delicious, vegan and kid-friendly- so we HAD to share it with you!

If you are or know someone Hispanic, this season includes coquito. Coquito is a traditional drink served around this time of year that’s shared with, and sometimes sold to, family, friends and neighbors. 

Over the years, Jackie and her husband have stopped drinking alcohol and adopted a plant-based diet. They're also parents to three kids, so she decided to modify her family’s coquito recipe and make it a kid-friendly and dairy-free that still tastes very similar to the original! (Don’t worry—if you drink alcohol, you can simply add rum in).

Ingredients:

  • 1 can (13.5 oz.) coconut milk 
  • 1 can (15 oz.) cream of coconut
  • 1 can (11.6 oz.) condensed coconut milk
  • 1 tsp. ground cinnamon powder
  • ½ tsp. ground Nutmeg powder
  • 1 tsp. vanilla extract
  • 1 cinnamon stick per serving 

Directions:

  1. Pour 1 can of coconut milk, 1 can of crema de coco and 1 can of condensed coconut milk into a blender pitcher.
  2. Add in the 1 tsp cinnamon, ½ tsp of nutmeg and 1 tsp of vanilla extract. 
  3. Blend for 1 - 2 minutes.
  4. Place into a serving pitcher and chill in the refrigerator for 3 - 4 hours. 
  5. Shake the pitcher, serve into a cup, stir with a cinnamon stick, and enjoy!

Ingredientes:

  • 1 lata (13.5 oz) de leche de coco
  • 1 lata (15 oz) de crema de coco
  • 1 lata (11.6 oz) de leche de coco condensada
  • 1 cucharadita polvo de canela molida
  • ½ cucharadita polvo de nuez moscada molida
  • 1 cucharadita extracto de vainilla
  • 1 rama de canela por ración

Direcciones:

  1. Vierta 1 lata de leche de coco, 1 lata de crema de coco y 1 lata de leche de coco condensada en una jarra de licuadora.
  2. Agregue 1 cucharadita de canela, ½ cucharadita de nuez moscada y 1 cucharadita de extracto de vainilla.
  3. Licue durante 1 a 2 minutos.
  4. Coloque en una jarra para servir y enfríe en el refrigerador durante 3 a 4 horas.
  5. Agita la jarra, sírvela en una taza, revuelve con una rama de canela y ¡disfrútala!
