Goya© Quinoa and Black Bean Chili

Ingredients:
- 1 cup Organic Quinoa
- 1 tbsp extra virgin olive oil
- 1 large onion, chopped
- 1 tbsp minced garlic
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp oregano
- 1 can tomato sauce
- 2 cans black beans
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1 tbsp Chipotle Peppers in Adobo Sauce
- 1 cup water
- 1 can golden corn
Directions:
- In a pot, cook 1 cup quinoa.
- In a separate pot, add olive oil, onion, garlic, chili powder, cumin, and oregano. Cook until onions are soft.
- Add tomato sauce, black beans, bell peppers, chipotle peppers, and water to the pot. Boil, and then simmer.
- Add corn and the cooked quinoa to the pot and stir to incorporate all ingredients.
- Serve hot!
