Goya© Quinoa and Black Bean Chili

Ingredients:

  • 1 cup Organic Quinoa
  • 1 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 1 tbsp minced garlic
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp oregano
  • 1 can tomato sauce
  • 2 cans black beans
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1 tbsp Chipotle Peppers in Adobo Sauce
  • 1 cup water
  • 1 can golden corn

Directions:

  1. In a pot, cook 1 cup quinoa.
  2. In a separate pot, add olive oil, onion, garlic, chili powder, cumin, and oregano. Cook until onions are soft.
  3. Add tomato sauce, black beans, bell peppers, chipotle peppers, and water to the pot. Boil, and then simmer.
  4. Add corn and the cooked quinoa to the pot and stir to incorporate all ingredients.
  5. Serve hot!
