Chocolate Cherry Brownie Bites

Ingredients:

  • 1 gluten-free brownie mix, cooked according to package directions
  • 28 – 30 Chilean Cherries, rinsed and dried
  • 1 cup dark chocolate, melted
  • optional – sprinkles

Directions:

  1. Cool baked brownie mix completely. Using your fingers (this works best with gloves on), crumble up the brownie mixture. Take about a tablespoon or two of brownie and enrobe it around a single cherry, pressing it against the cherry all the way around, but leaving the stem sticking out. Repeat for the rest of the cherries.
  2.  Place cherries on a platter covered with parchment paper. Freeze for 5 minutes.
  3.  Remove cherries from the freezer and, working one a time, dip each brownie-covered cherry into the melted dark chocolate, letting the excess drip off. Return cherry to the platter and add sprinkles immediately. Repeat for the rest of the cherries.  Return all of the chocolate-dipped cherries to the freezer for another five minutes, then refrigerate until serving.
