Chocolate Walnut Biscotti

 

Ingredients

  • 6 Tablespoons Butter *

  • 1 cup granulated sugar

  • 2 eggs

  • 2 cups all-purpose flour

  • 1/2 cup cocoa powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon Davis Baking Powder

  • 1/4 teaspoon salt

  • 1 cup chopped walnuts

  • 1 cup semisweet chocolate chips

  • 1 tablespoon confectioners' sugar *Note: Do not substitute margarine or shortening for the butter. It is the butter that helps give biscotti its unique crispiness.

Cooking Instructions

In a large bowl, cream butter and sugar together; add eggs. In a separate bowl, mix flour, cocoa, baking soda, Davis Baking Powder and salt. Add this to the creamed mixture and mix thoroughly. Mix in chopped walnuts and chocolate chips.

 

Preheat oven to 350 degrees; grease and flour cookie sheet.
With floured hands shape dough into two flattened logs approximately 12 inches long; sprinkle with confectioners' sugar.  Bake 35 minutes; cool on baking sheet until warm, about 10 minutes; transfer to cutting board and cut into 3/4 inch slices.
Arrange cut pieces with cut sides down on baking sheet and bake until crisp, about 8 to 10 minutes.
