Prepare rice according to package directions.
Preheat oven to 400 degrees. In a large bowl, combine the cheeses, sausage and cooked rice. Mix well. Stuff each poblano pepper half with mixture. Wrap pepper with a slice of bacon. Place eight pepper halves on a baking sheet. Bake 25 minutes. Turn on broiler and cook for approximately 5 minutes or until bacon is crisp. TIP: Substitute bell peppers instead of poblano peppers.
