Spinach Pesto Omelet

Serving Size: 2 servings
Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients

  • 1 can (14.2 oz.) DEL MONTE® Whole Leaf Spinach, well drained and chopped
  • ¼ cup onion, chopped
  • 2 tsp. olive oil
  • 1 Tbsp. low-fat pesto
  • 1 cup egg substitute
  • 1 tomato, sliced Fresh basil, chopped

Cooking Instructions

  1. Cook onion in non-stick skillet until tender. Add spinach and pesto; heat through. Set aside.
  2. Wipe off same skillet. Add more oil if needed. Cook half of egg substitute, spreading evenly in skillet until mixture starts to set.
  3. Spoon half of spinach mixture over one side of the egg and gently fold other half over spinach.
  4. Remove to dish. Repeat with remaining egg and spinach.
  5. Garnish with tomato slices and basil. Serve with Parmesan cheese, if desired.
