Chicken Tortilla Soup

Serving Size: 6 servings
Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients

  • 1 can (48 oz.) COLLEGE INN® Light and Fat Free Chicken Broth
  • 2 cans (14-½ oz. each) DEL MONTE®, Stewed Tomatoes Mexican Recipe, coarsely chopped
  • 2 medium onions, chopped
  • 2 cloves garlic, crushed
  • ½ tsp. ground cumin
  • 4 cups diced cooked chicken
  • 3 cups coarsely crushed baked tortilla chips
  • Cilantro
  • Shredded Monterey Jack Cheese (optional)

         

Cooking Instructions

  1. Combine broth, tomatoes with juice, onion, garlic and cumin in large soup pot; simmer 10 minutes.
  2. Add chicken. Simmer 3 to 5 minutes.
  3. Top individual servings with tortilla chips and cilantro
  4. Top with cheese if desired.
