Mango Chicken and Rice

Serving Size: 4 servings

Ingredients

  • 1 bag Success Jasmine or Success White Rice
  • 1 Tbsp. vegetable oil
  • 1 lb. boneless, skinless chicken, cut into 1 inch pieces
  • 1/2 cup red onion, diced
  • 1 red bell pepper, diced
  • 3/4 cup hot mango chutney
  • 1 fresh mango, peeled and diced
  • 1/4 cup cilantro

Cooking Instructions

Prepare rice according to package directions.

In a large skillet, heat oil over medium heat, add chicken and cook until no longer pink in center.  Add red onion and red bell pepper, cook for 5 minutes.  Add mango chutney, rice, mango and cilantro.  Stir well and serve
