Noodle Kugel

Serving Size: 8-10 servings

Ingredients

  • 16 oz. can peaches, drained
  • 8 oz. wide noodles
  • 3 eggs
  • ¾ cup sugar
  • ¾ cup milk
  • 16 oz. Friendship® Sour Cream (Regular or Light)
  • 16 oz. Friendship® 1% Lowfat Cottage Cheese 
  • 1 tsp. vanilla
  • ¼ cup butter
  • ½ cup honey nut cereal, crushed
  • ½ tsp. cinnamon

  

Cooking Instructions

  1. Dice all but 10 slices of peaches and set aside.
  2. Boil noodles, drain and rinse with cold water.
  3. Beat eggs with sugar, then add milk and Friendship® Sour Cream. Add Friendship® Cottage Cheese, vanilla and diced peaches and mix well.
  4. Add noodles,  toss lightly and pour into greased 8x12 in. casserole dish. Melt butter and pour droplets on top.
  5. Crush honey nut cereal in food processor. Sprinkle crushed cereal & cinnamon over top of noodles. 
  6. Arrange peach slices on top. Bake at 350º for 1 ½ hours until golden brown.
