Championship Blueberry Muffins

 

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons Davis Baking Powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated lemon peel
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 3/4 cup fresh blueberries

Cooking Instructions

  1. Combine first 5 ingredients in large mixing bowl; make well in center of mixture.
  2. Combine egg, milk, and oil; add mixture to dry ingredients, stirring just until moistened.
  3. Spoon into greased muffin pans filling about two-thirds full.
  4. Bake at 400 degrees F for 20 to 25 minutes or until light golden brown.
  5. Remove muffins to wire rack; cool completely.
