Salmon Stuffed Cucumbers


Ingredients

  • 1 can or pouch (5 oz.) Bumble BeeĀ® Pink Salmon, drained and flaked
  • 1 medium cucumber
  • 3 tablespoons light mayonnaise
  • 2 teaspoons finely chopped fresh dill
  • 1 teaspoons finely grated lemon rind
  • fresh ground black pepper to taste
  • lemon wedges and dill sprigs

Cooking Instructions

  1. Slice cucumber lengthwise; remove seeds.
  2. In small bowl, combine salmon, mayonnaise, dill and lemon rind. Add pepper to taste.
  3. Fill both halves of cucumber with salmon filling. Slice each half crosswise into 5 pieces.
  4. Garnish with lemon wedges and dill.
