Arizona Chicken Chili

Serving Size: 4 servings
Prep Time: 10 Minutes
Cook Time: 10 to 12 Minutes

Ingredients

  • 3 skinless, boneless chicken breast halves, diced
  • 1 can (14-½ oz.) DEL MONTE® Diced Tomatoes with Garlic and Onion
  • 1 Tbsp. chili powder
  • 1 can (15 oz.) low-sodium black beans or kidney beans, drained
  • 1 can (15-¼ oz.) DEL MONTE® Whole Kernel Golden Sweet Corn, drained
  • ¼ cup chopped cilantro or sliced green onions (optional)
  • Shredded Monterey Jack Cheese
  • Diced avocado
  • Chopped radishes
  • Sliced green onions

             

Cooking Instructions

  1. Combine chicken, undrained tomatoes and chili powder in medium saucepan. Cook over medium heat about 5 minutes or until chicken is done and sauce is slightly thickened.
  2. Add remaining ingredients and simmer 5-7 minutes or until heated through.
  3. Garnish with cheese, avocado, radishes and onions as desired.
